Irish Nachos

Irish Nachos are a delicious take on that tasty Mexican appetizer made with tortillas and nearly endless add-ons. This is my version of the Irish Nachos that Steven Heath, taught me. It's like cheesy fries with chili con carne and pepperoni. In my case i forgot to buy pepperoni hehe.

Ingredients:
4 potatoes, scrubbed and sliced thickly.
1 to 2 cups of canola or corn oil for frying
1 cup cheddar cheese, grated
1 cup Quickmelt cheese
1/2 cup sliced jalapeno peppers  (if you prefer it hot!)
2 T crumbled bacon / pepperoni
1/2 kilo ground beef
1 can of Chili con carne
* You can put sour cream, salsa, chili con carne.

Directions:
1. Deep fry the potatoes. If a deep fryer is to be used. Set the temperature to 375 degrees. Cook a few slices at a time. When they are quite crisp and golden brown, remove the potatoes from the oil and place on a plate with paper towel to absorb excess oil. 

2. To assemble the dish, arrange the potatoes on a heat-proof platter and layer with the grated cheddar cheese. Place the potato and cheese under the broiler for a few minutes until the cheese bubbles. Top the dish with the Chili con carne, bacon, pepperoni and any other toppings you choose. Serve with sour cream, salsa, and cheese dip on the side.


3. If you like a spicier version, add chili powder or sliced jalapenos. Serve hot!
